Kitchen Spotlight: Black Eyed Pea Salsa

This is another one of my warm weather favorites: so fresh and so yum, yum. Made some Monday night for snacking–so good.

Ingredients:

  1.  2 tomatoes
  2. 1 small onion
  3. Green Pepper (I use half of one–again, my husband doesn’t agree with them…or vice versa).
  4. Jalapeno Pepper (seeded)
  5. Lime (juiced–2 tbsp)
  6. Extra Virgin Olive Oil (1 teaspoon)
  7. Complete seasoning (1/2 tsp)
  8. Black pepper (1/4 teaspoon)
  9. Cilantro (fresh is preferable, but you know…about 2 tbsp…just a bit less if not using fresh)
  10. 1 x 15.5 oz can black eyed peas (drained, rinsed)

  2. Looks delish and I agree–perfect for New Year’s. You know, when I was pregnant with my last baby I could not do bell peppers. I’m glad that was only a passing phase–they’re in so many things!
