Pork Chops

The other night, desperate for something besides chicken, pasta, or beef, I pinned this recipe for Pork Chops with Dijon Herb Sauce from SkinnyTaste.com. I already had most of the ingredients on hand–I just had to pick up the pork chops.  I actually picked up boneless pork chops because Food Lion’s selection was low, and they looked better than the bone-in version.  Also, my herbs were fresh oregano and freeze-dried basil because I had those left over from making the Pasta To Die For sauce. We had whole grain rice and zucchini as sides.

Bonnie Ray certainly approved of what was happening in the kitchen–she didn’t leave the whole time. She did score a few uncooked zucchini slices because the vet says that’s a healthy alternative to store-bought dog treats.
