Sweet Potatoes for Breakfast

f you’d asked me 5 months ago what I’d be having for breakfast on a Saturday in December, I would have probably said bacon and eggs…or at least eggs and avocado toast with pickled onions and feta cheese. 😋 If you’d asked me 2 or 3 months ago, I would have said nothing. I’ll never be able to eat again. 😭 3 weeks ago: oatmeal. I’ll be eating only plain oatmeal and plain rice for life.

But here we are in the first Saturday of December, and I am having baked sweet potato slices sprinkled with cinnamon, cardamom, and drizzled with peanut butter. Unexpected. Different. But not untasty. Nutritious.

And so on this Saturday in December I am #grateful for progress, slow and non-linear though it may be.
