Me: I cannot think of another meal to make out of the same ingredients.
Also me: Here is a tortilla-less sweet potato burrito! πŸ€·β€β™€οΈ

Purple rice, a few black beans (not πŸ’― confident about them yet, but my success with navy bean soup bodes well), roasted sweet potato, sauteed greens and baby bella mushrooms. Turmeric and ghee obviously. But also a little bit of chili powder and some smoky paprika for a slightly tex-mex taste. There is entirely too much on this plate. At least half will go in a Tupperware for tomorrow.

I definitely thought about using actual tortillas but got scared. πŸ˜‚

Don’t y’all worry about Trent. He’s got take out. And he brought me some kefir, which is like #1 on everyone’s rebuild your gut list. On the DL, I’m scared of it, too. But I gotta start sometime. Can’t keep relying on probiotic pills.
