If you’d asked me last year what I’d be eating on Christmas Eve 2020, I would not have said, “I’ll be trying a little Korean Fried Rice with Kimchi.” But here we are. Fingers crossed this goes well! Rice + peas & carrots & kimchi & portobello mushrooms. Fried egg. Really, the kimchi is the only new thing here. I have made a lot of progress (but still eating that rice like it’s my job! ).
And even though it technically kills the probiotics, I did cook the kimchi, so if that goes well, I might give uncooked kimchi a shot in am upcoming meal. I’ve been having good luck with sauerkraut, and I found coconut milk yogurt with live active cultures. #operationrecovery
